Cast Iron Chicken Pot Pie – Only 4 Ingredients!

I’ve been cooking with my cast iron dutch ovens for a few years. During that time my family has enjoyed a lot of stews, chilis, one-pot meals, and desserts. Tonight I wanted to bake biscuits for the first time and make a meal that would be hearty, yummy, easy and would require very little effort because.. well because I’m camping!

I found this recipe online. It called for the meal to be made in a cast iron skillet. While I do have a cast iron skillet, I decided to use my dutch oven instead to bake the biscuits separately because some reviews said that the bottoms of the biscuits were soggy. Other times I’ve made recipes like this, I have also had the soggy bottom problem. So, I decided to change it up a bit. I made the entire meal in my 10 inch dutch oven in two stages.

First, I started my coals in the chimney. This takes about one bottle of beer (I drink slow) for the coals to be ready to cook with. By that time, I’m feeling pretty good! The coals were dumped and I then lined my dutch oven with a paper liner. The biscuit dough was put in and it was ready to bake! (I cheated and used the biscuits in the tube. Remember, one of my goals was EASY!)

I followed the directions, and baked the biscuits as close to 350 degrees as I could get without a thermometer. Here is a guide that I follow to know how many coals to use. It said that I needed to put 7 coals underneath the dutch oven and 14 on top. After 15 minutes of baking, I checked them. My dutch oven was cold at the start, so the biscuits were not quite done. I gave them another 5 minutes and soon I started to smell the goodness and knew that they were done. I pulled out the liner with the biscuits and set them aside until later.

Earlier in the day I had purchased a rotisserie chicken and pulled off all of the meat. Now, I combined the chopped up chicken, a can of cream of chicken soup, and a can of mixed vegetables. I carefully put a new liner in the dutch oven, keeping my fingers away from the the sides so I would not burn myself because it was HOT! I poured the chicken mixture in, put on the lid and added a few fresh coals. Within minutes it was bubbly and warm and we were ready to eat! I put the biscuits back on the mixture and served up a yummy and warm supper! There were very little leftovers! This recipe would feed a family of four with very little left over. And, because I used those liners, clean up was a breeze! I will be adding this to my campground recipe list, and this recipe is also a good one for at home where the biscuits and meat can bake side by side, making the meal a quick one!
